Savory Chicken with Rice & Veggies (with mixed greens)

Prep time: 30 minutes

Serves: 4 to 6 people


  • 2 cups chicken broth
  • ½ red onion, chopped
  • 1.5lbs boneless chicken breast

  • 4 to 6 oz mushrooms, sliced
  • 1 box chicken rice pilaf (or regular)
  • 1 cup frozen peas
  • 1 tbsp butter

Heat broth in medium saucepan on med/high heat. Add chicken. Cook until white and cooked through. Remove chicken from pan (keep stock in pan) and let cool slightly. Shred chicken into small pieces and set aside. Add rice and flavor packet, if using pilaf, to the same saucepan, cover and cook until all stock is absorbed, about 20 minutes. Meanwhile, in a small skillet, melt the butter and add the onions and mushrooms. Cook for 5 to 8 minutes. Add the peas during the last few minutes of cooking time. Mix it all together (rice, chicken & veggies). Voila- a delicious dinner!

Serve with mixed greens & salad dressing.
