Pesto Fettuccine (with Broccoli)

Prep time: 20 minutes

Serves: 4 to 6 people


  • 1/2 box fettuccine pasta
  • 1/3 cup sundried tomatoes, chopped
  • 1 to 1.5 lbs ground turkey or beef

  • 1/3 cup pesto sauce (we use Pastene brand)
  • 1 green pepper, chopped
  • 1/2 cup half & half

Side Dish:

  • 1 bunch of broccoli

Cook fettuccine per package instructions. Drain and set aside. In a large skillet, cook meat over medium heat for about 8 minutes, stirring often until browned. Drain fat and return to pan. Add pepper and sun dried tomatoes. Cook for 4 to 6 minutes until pepper is crisp/tender. Add fettuccine, pesto and half & half to the skillet. Reduce heat to low and cook for a few more minutes until heated through. Cook broccoli in simmering water until bright green. Approx. 5 to 8 minutes.
