Chicken Panzella (with Steamed Veggies)
Prep time: 30 minutes
Serves: 4 to 6 people
- ½ loaf Italian bread
- 3 tbsp olive oil
- 28 oz diced tomatoes, any flavor
- 2 garlic cloves, minced
- 1.5 lbs boneless chicken breast
- ½ cup shredded parmesan cheese
Place bread in large bowl. Pour 2 tbsp of oil and tomatoes over bread. Let soak for 10 minutes. Cut chicken into large pieces. Heat 1 tbsp oil in a large skillet on medium heat. Add garlic and cook 1 minute. Add chicken and cook through. Remove from pan. Pour bread mix into pan and cook for 5 minutes on low/medium heat until warmed. Return chicken and gently stir into bread. Sprinkle with cheese.
- 1 to 2 summer squash, chopped
- 1 to 2 zucchini, chopped
Steam veggies over simmering water until fork tender.
