Balsamic Pork Tenderloin (with Cauliflower Italiano and Green Beans)


Prep time: 20 minutes

Serves: 4 to 6 people


Ingredients:
 

  • 1.5 lbs pork tenderloin
  • 4 cloves garlic, minced
  • 3 tbsp olive oil
  • 2 tbsp balsamic vinegar
  • 1 tsp salt

Preheat oven to 425. Spray baking dish with cooking spray and place pork in dish. Mix remaining ingredients in small bowl. Spread over pork. Cool for 25 minutes or until pork is no longer pink at thickest point. Remove, cover with foil and let sit for 10 minutes before slicing.



Side dish

Ingredients:
 

  • 1 lb green beans, ends trimmed
  • ¼ cup water
  • 1 tsp olive oil
  • ½ green pepper, chopped
  • 2 tbsp Italian salad dressing
  • 2 garlic cloves, minced
  • 1 cauliflower, chopped
  • ½ small onion, chopped


Cook green beans over simmering water until bright green.

Heat oil in skillet and add onion and garlic. Add cauliflower, water and Italian dressing. Cook and cover for 5 minutes. Add green pepper and cook 5 minutes uncovered.
