Kid Friendly Mac & Cheese Soup


For the Soup

2 tablespoons salted butter

2 teaspoons minced garlic

2 tablespoons all purpose flour

6 cups vegetable broth

1 bay leaf

1 cup dry macaroni elbows

1 cup whipping cream

1 tablespoon Dijon mustard

1 teaspoon Worcestershire sauce

½ teaspoon white pepper

8 ounces shredded extra sharp cheddar cheese

For the Topping

12 cherry tomatoes cut in half

1 tablespoon olive oil

Salt and freshly ground black pepper

Directions: If you want to top the soup with roasted tomatoes, preheat the oven to 425 degrees. Place the cut side up of the tomato on a baking sheet. Drizzle with olive oil and sprinkle with salt and pepper to your liking. Roast the tomatoes for about 12 minutes.

In a large saucepan, melt the butter over medium heat. Add the garlic and stir until soft.  Whisk in the flour, vegetable broth and bay leaf slowly. Turn the heat to high and bring to a boil. Add in the macaroni and boil until tender. Remove the bay leaf. Stir in the cream, mustard, Worcestershire sauce and pepper. Add in the cheese and stir until melted. Let soup boil for two minutes then remove from heat. Top with roasted tomatoes and enjoy!


Kid Friendly Cheeseburger Soup


½ pound ground beef

¾ cup chopped onions

¾ shredded carrots

¾ cup diced celery

1 teaspoon dried basil

1 teaspoon dried parsley flakes

4 tablespoons butter

3 cups chicken broth

4 cups peeled and diced potatoes

¼ cup all purpose flours

2 cups of Velveeta cheese cubed

1 ½ cups milk

¾ teaspoon salt

¼ to ½ teaspoon pepper

¼ cup sour cream

Directions: Brown the beef in saucepan. Drain and set aside for later. In same saucepan, add 1 teaspoon of butter. Add in onion, shredded carrots, parsley, basil, and celery. Cook until tender. Add in the broth, potatoes and beef. Bring to a boil. Reduce heat and cover until potatoes are tender. In small skillet, melt the rest of the butter and add in the flour. Stir until bubbly. Add into the soup and bring to a boil. Stir for two minutes. Turn the heat down to low. Stir in cheese, milk, salt and pepper. Stir until cheese melts. Remove from heat and stir in sour cream. Once blended, enjoy!


Kid Friendly Chicken Tortellini Soup


9 oz cut broccoli

6 cups water

½ cup dry vermouth (or water works too!)

3 cans condensed chicken broth

1 can condensed cream of chicken soup

2 cups cooked chicken, cubed

1 cup chopped onion

1 cup sliced carrots

½ teaspoon dried basil leaves

½ teaspoon dried oregano leaves

2 cloves garlic, minced

1 package cheese tortellini

¼ cup grated Parmesan cheese (optional)

Directions: Be sure that broccoli is cut up. In a large saucepan, mix all ingredients together except cheese, broccoli and tortellini. Heat to boiling. Stir in the tortellini and reduce heat. Simmer for 30 minutes without cover on. Be sure to stir occasionally.  Stir in broccoli. Simmer for 10 minutes until broccoli is crisp and tender. Feel free to add sprinkle cheese on individual servings if desired.


Kid Friendly Chicken Noodle Soup


6 cups chicken stock

2 cups of shredded cooked chicken

2 tablespoons olive oil

2 stalks celery, chopped

2 carrots, chopped

1 leek, halved and sliced finely

2 cups of noodles of your choice

2 bay leaves

¼ teaspoon dried thyme

2 tablespoons fresh parsley, finely chopped

Sea salt and pepper to taste

Directions: On medium heat, add olive oil, celery, carrots and leek to a stockpot. Cook until vegetables start to soften. Add in chicken stock, bay leaves and thyme. Bring to a boil then reduce to simmer for 5 minutes. Add shredded chicken and noodles. Turn up heat to bring soup to a gentle boil and cook noodles. Turn off heat and remove bay leaves. Add parsley and salt and pepper to taste. Enjoy!
