Turkey Alfredo with Baby Spinach (with Asparagus)


Prep time: 20 minutes

Serves: 4 to 6 people

Ingredients:

  • 1 tbsp butter
  • 3 tbsp flour
  • 1 cup milk, low fat
  • ½ cup shredded cheddar cheese, low fat
  • ½ cup shredded parmesan cheese

  • 1.5 lbs ground turkey
  • ½ of 5 oz. package baby spinach drained
  • 14.5 oz diced tomatoes, any flavor
  • 2 scallions, chopped

Melt butter in small saucepan, add flour and stir until smooth. Add milk and cheeses and stir until melted. Set aside. Spray skillet with cooking spray and add turkey. Cook until browned. Stir in spinach, tomatoes, scallions and cheese sauce. Cook until heated through.



Side dish:

Cook asparagus over simmering water until bright green.
