Honey Mustard Salmon with Mango Couscous and Broccoli
The Honey Mustard Salmon is a super quick & easy way to get this healthy fish on the table and most importantly one that kids will eat! This was enjoyed by all our testers and actually got a thumbs up from my 12 year old son who insists he does not like salmon. The recipe is very versatile as you could always swap the salmon out for haddock or cod if you prefer. We use this recipe all the time on our menus with the best seafood special on offer. Served with the Mango Couscous (the kid testers loved this side!) and a simple steamed veggie, its a healthy and well rounded dinner that is oh so easy...and we think easy is good!
- 1.5 to 2 lbs of salmon (or other fish of choice such as cod or haddock)
- 2 tbsp honey
- 2 tbsp dijon mustard
- 2 cloves of garlic, minced or finely chopped
- 1 tbsp olive oil
- juice of 1/2 lemon
Place fish in baking dish. Combine rest of ingredients in bowl & pour over fish. Place in fridge for 30 mins. Preheat broiler to medium, spray broiler pan w/ cooking spray & place fish on pan. Brush a bit of marinade on fish. Cook for 10 to 12 mins until cooked through. Delicious!
- 1 box of couscous (any variety)
- 1/2 red pepper, chopped
- 2 scallions, chopped
- 1 mango, peeled and roughly choppe
- drizzle of lemon juice from other half of lemon
- salt and pepper, to taste
Prepare couscous according to package. Stir in all remaining ingredients. Looks beautiful on the plate too!
