Prep time: 15 minutes
Serves: 4 people
- 2 lb boneless chicken breast
- 2 tbsp olive oil
- 1 oz packet taco seasoning mix
- 1 tsp dried oregano
- Juice of one lemon
- 1 cup frozen peas
- ½ cup chicken broth
- Corn on the cob
- ½ to 1 lb green beans
Place chicken in a shallow baking dish. Mix remaining ingredients in a small bowl with a fork. Pour over chicken. Marinate for 1 hour. Preheat grill or broiler to med/high. Remove chicken from marinade and cook for 10 to 15 minutes, turning over half way. Continue cooking until chicken is no longer pink inside.
Peel corn and bring large pot of water to a boil. Add corn and cook for about 10 minutes until tender. Serve with butter, salt and pepper.
Cook green beans over simmering water until just bright green.
