Cod with Easy Mango Salsa


Prep time: 20 minutes

Serves: 4 to 6 people

Ingredients:

  • 2 lb cod fillets
  • 1 cup pineapple juice
  • 3 garlic cloves, minced
  • 2 tbsp soy sauce
  • 1 mango, peeled & chopped
  • ½ red pepper, chopped
  • Handful parsley, fresh, chopped

  • 1 tbsp olive oil
  • 1 tbsp red wine vinegar
  • Juice of ½ lemon

Side Dish:

  • 1 package rice pilaf
  • 3 or 4 zucchini, chopped


Place fish in shallow baking dish. Mix juice, garlic, and soy sauce in small bowl and pour over fish. Marinate for 30 minutes to 1 hour. Bake at 400 for 15 minutes until it’s cooked through. Serve with salsa spooned over fish.



To Make Salsa: Chop mango, pepper, onion & parsley combine in bowl with oil, vinegar, lemon juice & salt. The salsa really makes this recipe and yes the kids ate it!



Prepare rice according to package instructions.
Steam zucchini for about 10 minutes until tender.
