Serves: 4 to 6 people

Ingredients:

  • 1.5 to 2 lbs. boneless pork
  • 2 tbsp. balsamic vinegar
  • 2 garlic cloves, minced
  • 1 tsp. salt
  • 3 tbsp. olive oil
  • black pepper, to taste

Side Dish:

  • 3 potatoes, chopped
  • 2 sweet potatoes
  • ½ to 1 lb. green beans

Preheat oven to 375 degrees. Place pork in baking dish and combine remaining ingredients in a small bowl. Spread over pork, turning to coat. Bake 15 to 20 minutes, turning over halfway thru cooking time, until it is no longer pink inside.

Meanwhile, bring a large pot of water to boil. Add potatoes, cook until fork tender. Drain and mash together. Add butter, salt and pepper. Cook green beans in simmering water until just bright green.
